  • 1 lb Boneless skinless chicken breasts, diced
  • 1/3 cup Hot sauce (such as Frank's RedHot)
  • 3 tbsp Unsalted butter, melted
  • 1 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/2 tsp Black pepper
  • 2 cups Cooked quinoa or rice
  • 1 cup Mixed greens or shredded lettuce
  • 1/2 cup Dairy-free ranch dressing or regular ranch
  • 1/3 cup Shredded cheddar cheese or dairy-free cheese
  • 1/2 cup Sliced carrots or celery sticks for garnish

Instructions

Preparation Steps

  • Set your oven to 400°F (200°C) and prepare a baking tray with parchment paper.
  • In a bowl, mix the diced chicken pieces with olive oil, salt, and black pepper. Spread the seasoned chicken on the baking tray.
  • Bake the chicken for about 15 minutes until cooked through and golden, checking halfway through for even cooking.
  • While the chicken is baking, melt the butter in a medium saucepan over medium heat. Once melted, stir in hot sauce and allow to simmer for about 3 minutes, stirring occasionally.
  • After the chicken is done, toss it in the prepared buffalo sauce until well coated.
  • To serve, layer cooked quinoa or rice in bowls, top with buffalo chicken, mixed greens, and your choice of carrots or celery. Drizzle ranch dressing and sprinkle with shredded cheese.
