  • 1 medium yellow onion finely chopped
  • 1 medium green bell pepper finely chopped
  • 3 cloves fresh garlic minced
  • 1 teaspoon ground coriander
  • 1 teaspoon chipotle powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 4 cups low-sodium chicken broth or vegetable broth
  • 10 oz green enchilada sauce (canned)
  • 15 oz fire-roasted diced tomatoes (canned)
  • 4 oz diced jalapeños (canned or fresh)
  • 15 oz pinto beans (canned, drained and rinsed)
  • 1.5 cups sweet corn kernels drained
  • 2 cups cooked shredded chicken (rotisserie chicken recommended)
  • 4 oz creamy goat cheese softened
  • 1 cup heavy whipping cream
  • 1.5 cups shredded Monterey Jack cheese
  • Chopped fresh cilantro
  • Sliced ripe avocado
  • Sour cream
  • Crispy tortilla strips
  • Lime wedges

Instructions

Cooking Steps

  • Heat the olive oil in a large pot over medium heat. Sauté the onion and green bell pepper for about 5 minutes until softened. Add the minced garlic, coriander, chipotle powder, paprika, and thyme; cook for an additional minute until fragrant.
  • Add the chicken broth, green enchilada sauce, fire-roasted tomatoes, and diced jalapeños. Stir the mixture together and bring it to a gentle simmer.
  • Incorporate the pinto beans, sweet corn, and shredded chicken into the pot. Allow the soup to simmer for around 15 minutes to meld the flavors.
  • Lower the heat and mix in the goat cheese and heavy cream, correctly whisking until the goat cheese is fully melted and the soup is smooth. Add the shredded Monterey Jack cheese gradually, stirring until well combined.
  • Taste and tweak the seasoning as necessary with salt and pepper before serving. Ladle into bowls and top with fresh cilantro, avocado, sour cream, and crispy tortilla strips.

Notes

This soup can be prepped ahead and reheated; it tastes even better the next day. For a thicker consistency, reduce the amount of broth during cooking.
