1teaspoondried thyme
2sprigsfresh rosemary
6cupschicken broth
3/4cupwild rice blendsuch as Lundberg's Wild Blend®
Stir in the minced garlic, dried thyme, and rosemary sprigs. Cook for an additional 1-2 minutes, allowing the flavors to develop. Season with salt and pepper.
Pour in the chicken broth, scraping up any brown bits from the bottom of the pot. Add the wild rice and cooked chicken. Bring to a simmer and cover. Let it cook for approximately 40 minutes, or until the rice is chewy-tender.
In a small bowl, mix the cornstarch with a splash of cold water to create a slurry. Stir this mixture into the soup along with the heavy cream, and let it simmer uncovered for another 5-7 minutes until it thickens slightly.
Remove from heat and stir in the fresh lemon juice. Adjust salt and pepper to taste before serving.
