Ingredients

Soup Base

  • 12 oz smoked sausage (kielbasa), sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon canola oil for higher smoke point
  • 1 medium white onion, diced
  • 1 medium green bell pepper, diced
  • 2 medium carrots, diced
  • 4 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 2 tablespoons all-purpose flour
  • 6 cups low-sodium chicken broth
  • 1.2 lb Yukon Gold potatoes, cubed
  • 3/4 cup half-and-half
  • 2 teaspoons Dijon mustard
  • Kosher salt to taste
  • freshly ground black pepper to taste
  • crushed red pepper flakes optional, for heat
  • chopped fresh chives for garnish

Instructions

Cooking Method

  • In a large pot, heat the canola oil over medium heat. Add the sliced kielbasa and sauté until it starts to brown, about 6-8 minutes. Remove half of the kielbasa and set aside for garnishing later.
  • In the same pot, add butter, then toss in the diced onion, bell pepper, and carrots. Cook for 5-6 minutes or until the vegetables soften, stirring occasionally. Stir in the minced garlic and smoked paprika, cooking for another minute until fragrant.
  • Sprinkle flour over the vegetable mixture and stir for about 1-2 minutes to cook the flour slightly. Gradually add the chicken broth while whisking to avoid lumps. Mix in the cubed potatoes and bay leaf. Bring to a gentle simmer and cook for 20 minutes, or until the potatoes are tender.
  • Once the potatoes are tender, remove the bay leaf. Using a potato masher, lightly mash some potatoes to thicken the soup while leaving plenty of chunks. Stir in the reserved kielbasa, half-and-half, and Dijon mustard. Allow to heat through over low heat for about 5 minutes.
  • Taste the soup and adjust seasoning with salt, pepper, and red pepper flakes if desired. Serve hot in bowls, garnished with chives and a drizzle of olive oil if you like.
