Ingredients

Dipping Sauces

  • 1 cup Greek yogurt or sour cream
  • 1 medium lime juiced
  • 2 cloves minced garlic
  • 2 tbsp fresh cilantro chopped

Taquito Filling

  • 2 lbs boneless skinless chicken thighs cooked and shredded
  • 1 tbsp olive oil
  • 1 1/2 cups shredded cheese cheddar or Monterey Jack
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp salt or to taste
  • 1 tsp black pepper freshly ground
  • 16 oz corn tortillas

Instructions

Preparation Steps

  • In a mixing bowl, combine the shredded chicken, olive oil, cumin, smoked paprika, salt, and pepper. Mix until well combined.
  • In another bowl, stir together the Greek yogurt, lime juice, minced garlic, and chopped cilantro. Adjust seasoning to taste and chill until serving.
  • Preheat your oven to 425°F (220°C). Lay the tortillas on a damp paper towel and microwave for about 30 seconds or until soft and pliable.
  • Spoon approximately 2 ounces of the chicken mixture into each tortilla, then roll them tightly and secure with a toothpick. Place seam side down on a lined baking sheet.
  • Lightly spray the taquitos with cooking oil and bake for 20-25 minutes, turning halfway through until they are golden and crispy.
  • Once baked, remove the toothpicks and serve the taquitos warm with the dipping sauce. Top with additional cilantro if desired.

Notes

For added crunch, consider shallow frying the taquitos in oil for a couple of minutes until golden brown.
