In a large pot, pour in the neutral oil and heat it over medium-high heat. Add the tortilla strips and fry until they are golden brown and crispy, about 2-3 minutes. Use a slotted spoon to transfer them to a paper towel-lined plate and season them lightly with salt.
In the same pot, sauté the diced onion, garlic, jalapeños, poblano, and red bell pepper. Cook on medium heat for 5-7 minutes until they have softened and become fragrant.
Stir in cumin, smoked paprika, chili powder, and oregano, letting them bloom in the heat for about 1 minute.
Pour in the chicken broth and add the fire-roasted tomatoes, corn, black beans, and shredded chicken. Season with salt and pepper, then bring the mixture to a boil. Reduce the heat and let it simmer for 15 minutes to allow the flavors to meld together.
To serve, ladle the soup into bowls and top with sliced avocado, scallions, cilantro, jalapeños, and crunchy fried tortilla strips. Don’t forget to serve lime wedges on the side for a zesty kick!
