Ingredients

  • 1/2 cup vegetable oil
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup molasses
  • 1/2 cup hot water
  • 2 1/4 cup all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt

Instructions

  • Preheat your oven to 350°F. Line a 9x5 loaf pan with parchment paper or grease and flour it.
  • Combine the vegetable oil, brown sugar, eggs, and vanilla extract in a large bowl until smooth.
  • Mix the molasses with hot water in a small bowl, then stir into the wet mixture.
  • Whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt in a separate bowl.
  • Pour the wet ingredients into the dry mixture and gently stir just until combined. Don't overmix.
  • Pour the batter into the prepared pan, tent loosely with foil, and bake 50-60 minutes until the top springs back when pressed.
  • Cool completely on a rack before removing from the pan and slicing.

Notes

Best enjoyed fresh but can be stored at room temperature, wrapped well, for a few days. Freezes well with parchment between slices.
