  • 2 cups broccoli florets
  • 1 red bell pepper chopped
  • 1 yellow bell pepper chopped
  • 2 tbsp extra virgin olive oil
  • 2 tbsp chopped fresh parsley or sliced green onions for garnish
  • 1 tsp smoked paprika for an extra flavor kick

Preparation Steps

  • Start by preheating your oven to 425°F (220°C). Prepare the sausage by slicing it into bite-sized rounds, and chop all the vegetables into uniform pieces for even cooking.
  • On a large baking sheet lined with parchment paper, combine the halved baby potatoes and sliced carrots. Drizzle 1 tablespoon of olive oil over them, season with salt and pepper, and toss to coat. Spread them out into a single layer and roast in the oven for 15 minutes.
  • While the potatoes and carrots are roasting, prepare the honey garlic glaze by mixing honey, minced garlic, soy sauce, smoked paprika, and the remaining 1 tablespoon of olive oil in a bowl.
  • After 15 minutes, add the chopped bell peppers, broccoli florets, and sliced sausage to the baking sheet with the potatoes and carrots. Pour the honey garlic mixture over the top and toss gently to combine.
  • Return the baking sheet to the oven and roast for an additional 20 minutes, stirring halfway through, until the vegetables are tender and the sausage is golden brown.
  • Once cooked, remove the pan from the oven and let it rest for about 5 minutes. Garnish with parsley or green onions before serving warm.
