Ingredients

Cheese Mixture

  • 1 cup Ricotta cheese
  • 1 cup Shredded mozzarella
  • 1/2 cup Grated Parmesan cheese

Tomato Topping

  • 2 cups Cherry tomatoes halved
  • 2 tbsp Olive oil divided
  • 2 cloves Garlic minced
  • 1/4 tsp Red pepper flakes optional for heat
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Garnish

  • 1/4 cup Fresh basil chopped

Instructions

Preparation Steps

  • Preheat your oven to 375°F (190°C). In a mixing bowl, add the cherry tomatoes along with 1 tablespoon of olive oil, minced garlic, red pepper flakes, salt, and black pepper. Toss well to coat the tomatoes evenly.
  • Spread the seasoned tomatoes onto a baking sheet and roast in the oven for about 15-20 minutes until they are blistered and caramelized. Stir once midway through cooking to ensure even roasting.
  • While the tomatoes are roasting, combine the ricotta, mozzarella, and Parmesan cheeses in a separate bowl. Drizzle in the remaining tablespoon of olive oil and mix until smooth and well incorporated.
  • Once the tomatoes are ready, pour the cheese mixture into a greased baking dish and evenly distribute it. Top with the hot roasted tomatoes, spreading them out evenly over the cheese.
  • Bake the dip in the oven for an additional 8-10 minutes, or until the cheeses are melted and bubbly. Remove from the oven and let it cool for a couple of minutes.
  • Garnish with freshly chopped basil before serving. Enjoy with toasted baguette slices or crispy crackers for dipping!

Notes

This dip can be made ahead of time and stored in the refrigerator for up to 2 days. Reheat in the oven until warmed through before serving.
For an extra kick, consider adding a dash of balsamic glaze on top just before serving.
