Ingredients

Fish and Seasonings

  • 1 lb white fish fillets (such as cod, tilapia, or mahi-mahi)
  • 1 tbsp extra virgin olive oil
  • 1 tsp paprika smoked or regular
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh lime juice

Taco Bowl Base and Toppings

  • 3 cups shredded leafy greens such as romaine or mixed salad greens
  • 2 cups prepared cauliflower rice
  • 1/2 cup diced cherry tomatoes
  • 1/2 cup shredded red cabbage
  • 1/4 cup thinly sliced red onion
  • 1 medium ripe avocado sliced
  • 1/4 cup chopped cilantro
  • 1 medium jalapeño sliced, optional

Creamy Sauce

  • 1/2 cup plain Greek yogurt
  • 1 tbsp mayonnaise
  • 1 tsp lime juice
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • 1/4 tsp salt

Instructions

Preparation Steps

  • Set the oven to 375°F (190°C) and prepare a baking sheet by lining it with parchment paper.
  • In a mixing bowl, combine the olive oil, paprika, cumin, garlic powder, chili powder, salt, black pepper, and lime juice. Stir until the mixture forms a smooth paste.
  • Coat the fish fillets generously with the seasoned oil mixture on both sides before arranging them on the prepared baking sheet.
  • Bake the fish for about 12-15 minutes or until it flakes easily with a fork. You may broil it for an additional minute for extra crispiness.
  • While the fish bakes, assemble the base of your taco bowls with the cauliflower rice and a layer of leafy greens in each serving bowl.
  • Top the rice and greens with cherry tomatoes, red cabbage, red onion, avocado, cilantro, and jalapeño as desired.
  • In a small bowl, whisk together the Greek yogurt, mayonnaise, lime juice, garlic powder, chili powder, and salt until smooth to create the sauce.
  • Once the fish is ready, place the fillets on top of the prepared bowls and drizzle with the creamy sauce. Serve immediately with lime wedges for an extra zest.

Notes

For a bit of crunch, try adding crushed tortilla chips on top just before serving. These tacos also taste delicious made ahead; simply store components separately in the fridge and assemble when ready to eat.
