Ingredients

For the Salmon

  • 4 oz salmon fillets
  • 3 tablespoons low-sodium soy sauce or tamari
  • 2 tablespoons honey
  • 2 tablespoons sriracha
  • 2 teaspoons minced garlic
  • 4 tablespoons water

For the Bowl Assembly

  • 2 cups cooked white rice
  • 1 ripe avocado sliced
  • 1 cucumber sliced
  • 1 cup cooked edamame
  • 1 cup sriracha mayo
  • 1 teaspoon sesame seeds for garnish

Instructions

Preparation Steps

  • Begin by cutting your salmon fillets into bite-sized pieces and set aside.
  • In a bowl, combine the soy sauce, honey, sriracha, garlic, and water, stirring well to create a glaze.
  • Heat a non-stick skillet over medium heat, lightly greasing it with oil. Once hot, add the salmon pieces.
  • Cook the salmon for about 4-5 minutes, flipping occasionally until it is lightly golden and cooked through.
  • Pour the glaze over the salmon and let it simmer for an additional 2-3 minutes, allowing the sauce to thicken.
  • Divide the cooked rice into four serving bowls and top each with the glazed salmon.
  • Add avocado slices, cucumber, and a generous scoop of edamame on top.
  • Finish with a drizzle of sriracha mayo and sprinkle sesame seeds for extra crunch.

Notes

For an added crunch, consider topping with crushed peanuts or sliced radishes. These bowls can be made ahead; just keep the components separate until ready to serve.
