Ingredients

Sweet Potato and Filling

  • 2 large sweet potatoes peeled and halved lengthwise
  • 1 lb lean ground beef
  • 1 cup cottage cheese low-fat or full-fat
  • 1 tablespoon hot honey store-bought or homemade
  • 1 teaspoon cumin for added flavor
  • 1 teaspoon olive oil
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon garlic powder
  • 1 pinch salt to taste
  • 1 pinch black pepper to taste
  • 2 tablespoons chopped fresh parsley optional, for garnish

Instructions

Preparation Steps

  • Preheat your oven to 400°F (200°C). Lay the sweet potato halves on a baking sheet, cut-side down. Lightly coat with olive oil and season with salt and pepper.
  • Bake the sweet potatoes for about 35 to 40 minutes or until they are soft and starting to brown around the edges.
  • In a skillet over medium heat, heat the remaining olive oil. Add the ground beef, smoked paprika, garlic powder, cumin, salt, and pepper. Cook until the meat is browned, stirring frequently, then drain any excess fat.
  • In a mixing bowl, blend the cooked beef with the cottage cheese, combining well.
  • Once the sweet potatoes are done, remove them from the oven and carefully flip them cut-side up. Spoon the beef and cheese mixture generously into each sweet potato half.
  • Drizzle hot honey over each filled sweet potato and return to the oven. Bake for an additional 5 to 8 minutes until the honey is bubbly and just beginning to caramelize.
  • Garnish with fresh parsley before serving.
