Cooking Steps

  • In a large skillet, warm the olive oil over medium heat. Sauté the minced garlic for about 1 minute until fragrant, ensuring it doesn’t brown.
  • Pour in the crushed tomatoes along with the oregano, red pepper flakes, and lemon zest. Let the mixture simmer for about 6 to 8 minutes until it slightly thickens.
  • Season the cod fillets with salt and pepper, then carefully nestle them into the simmering sauce. Cover the pan and cook for 8 to 10 minutes, or until the fish turns opaque and flakes easily with a fork.
  • Once cooked, remove the skillet from heat and sprinkle freshly torn basil on top for garnish. Serve hot with crusty bread or over rice.

Notes
