Preparation Steps
Preheat your oven according to the brownie mix package instructions and line an 8x8-inch baking dish with parchment paper, leaving an overhang for easy removal.
Prepare the brownie mix as directed, then pour the batter into the prepared baking dish. Bake for the time specified on the package or until a toothpick inserted comes out with a few moist crumbs. Allow the brownies to cool completely in the pan.
In a mixing bowl, beat together the softened cream cheese, confectioners' sugar, vanilla extract, and peppermint extract until the mixture is smooth and creamy.
Gently fold in the whipped topping and half of the crushed peppermint candies into the cream cheese mixture, ensuring it's well combined and fluffy.
Spread the peppermint cheesecake mixture evenly over the cooled brownie layer. Top with remaining crushed peppermint and mini chocolate chips, if desired.
Cover and refrigerate for at least 2 hours or until the cheesecake layer is firm. Once set, lift the bars from the pan using the parchment and cut into squares to serve.
