Ingredients

Main Ingredients

  • 14 oz lean breakfast turkey sausage
  • 5 large Southern-style biscuits
  • 1 tablespoon unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup unsweetened almond milk or your preferred milk
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 cup egg whites
  • 2 large whole eggs

Instructions

Preparation Steps

  • Preheat your oven based on biscuit package instructions. Bake the biscuits until they are golden brown and then allow them to cool slightly before chopping them into bite-sized pieces.
  • In a large non-stick skillet over medium heat, cook the turkey sausage until browned and fully cooked through. Remove from the skillet and set aside.
  • Using the same skillet, melt the butter over medium heat. Once melted, sprinkle the flour over the butter and stir constantly to create a smooth roux. Cook for about a minute to eliminate the raw flour taste.
  • Gradually whisk in the almond milk, stirring continuously until the mixture thickens into a smooth gravy. Season with salt, pepper, and onion powder. Stir the cooked sausage back into the gravy mixture.
  • In a separate bowl, whisk together the egg whites and whole eggs. Scramble the eggs in a non-stick pan over medium heat until fully set and fluffy.
  • Prepare your meal prep containers by distributing the biscuit pieces evenly among them. Top each portion with scrambled eggs and generously spoon the sausage gravy over the top.
  • Let the bowls cool completely before sealing with a lid or covering with plastic wrap. Store in the refrigerator for up to five days.
