Ingredients

Muffin Mixture

  • 1 cup oats (ground into flour)
  • 1 cup pumpkin puree (canned or homemade)
  • 3/4 cup plain Greek yogurt (plain or flavored)
  • 2 large eggs
  • 1/2 cup vanilla protein powder (any brand)
  • 1 tbsp pumpkin spice blend
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1/2 cup semi-sweet chocolate chips
  • 1 tbsp maple syrup (optional, for extra sweetness)

Instructions

Baking Instructions

  • Start by preheating your oven to 350°F (175°C) and line a muffin tray with paper liners or silicone molds.
  • In a blender or food processor, combine the oats and blend until they resemble a fine flour. Transfer this oat flour into a mixing bowl.
  • Mix in the pumpkin puree, Greek yogurt, eggs, protein powder, pumpkin spice, cinnamon, baking powder, baking soda, and salt until the mixture is well combined but do not over-mix.
  • Fold in the chocolate chips and maple syrup, if using, to finish your batter.
  • Spoon the batter evenly into the prepared muffin liners, filling each about 3/4 full.
  • Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean. Allow cooling slightly before removing from the tray.
